• Ensuring that food quality, quantity, freshness and presentation meet hotel standards
• Execute day to day operations.
• Assisting with scheduling, payroll and productivity
• Menu engineering, cost, pricing and implementing in Outlets and Banquets
• Provide and contribute to an excellent customer experience
• Conduct daily shift briefings to kitchen staff
• Manages staffing levels throughout shifts
• Organize, manage, and execute special events on/off property
• Follow all safety and sanitation policies when handling Food and Beverage
• Maintains Health & Safety Standards to meet company guidelines
• Assist in the supervision and staffing for all kitchen areas, preparation areas, and for supervising all employees throughout these areas.
• Inspect all storage areas to ensure that the best sanitation possible is maintained and that all equipment is functioning properly.
• Provide variety in menu preparation, within budgetary limitations.
• Select recipes which offer a product that is tasteful and contains ingredients and portion sizes that will ensure that cost standards are being met.
• Responsible for maintaining adequate training programs for kitchen staff
• Inventory excess production for use on menu or conversion into extenders.
• Ensure that the kitchen is prepared to start service on a timely basis.
• Responsible for the sanitation of all food preparation and storage areas and equipment.
• Ensure that requests and specifications in the function sheets are provided on a timely basis.
• Make profit improvement recommendations to the Executive Chef.
• Responsible for care of equipment.
• Perform other related duties as requested by the Executive Chef.

Requirements

• Diploma or degree in Hospitality management or related field, preferred
• 5 years in a Culinary Leadership position.
• Red Seal or equivalent
• Food Safety Training
• Food Handlers Certificate
• First Aid and CPR certified
